Ingredients

  • 1 lb ground beef

  • 1 (10 oz) can Rotel (diced tomatoes with green chilies, undrained)

  • 8 oz cream cheese, softened

  • 2 cups freshly shredded cheddar cheese

  • ½ small onion, diced (optional)

  • 1 tsp garlic powder (or 2 cloves garlic, minced)

  • ½ tsp salt

  • ½ tsp black pepper

Directions

  • Cook the beef
  • In a skillet over medium heat, cook the ground beef with the diced onion until browned and fully cooked. Drain excess grease.
  • Add seasoning
  • Stir in garlic, salt, and pepper and cook for another 30 seconds.
  • Add Rotel and cream cheese
  • Lower heat and add the Rotel (with juices) and cream cheese. Stir until the cream cheese is fully melted and combined.
  • Add shredded cheese
  • Gradually stir in the freshly shredded cheddar cheese until melted and smooth.
  • Tip: Add in batches and keep heat low for the creamiest texture.
