Campfire Foil Packet Potatoes (Easy Seasoned Potatoes)

1 lb yellow potatoes
2 tbsp butter or oil
½ tsp salt
¼ tsp black pepper
½ tsp paprika
½ tsp Cajun seasoning
½ tsp Italian seasoning
Directions
- Preheat your oven to 400 degrees.
- Wash and dice your potatoes into small, bite-sized cubes.
- Lay out a sheet of foil on a baking sheet, making sure it’s large enough to fold into a packet.
- Lightly spray the foil with cooking spray to prevent sticking.
- Add the diced potatoes onto the foil.
- Sprinkle the salt, pepper, paprika, Cajun seasoning, and Italian seasoning evenly over the potatoes.
- Add the butter or drizzle with oil on top.
- Place another sheet of foil over the potatoes and tightly fold the edges together to seal the packet completely.
- Bake for about 30 minutes, or until the potatoes are tender.
- Carefully open the foil (watch for steam) and serve warm.
Notes
- Kid-Friendly Adaptation: Cook the chicken at low heat in broth instead of buffalo sauce. Use fresh ingredients for better taste. Put some of the chicken aside for the kiddos (plain, no sauce) and toss the remaining chicken with the buffalo sauce before you broil it.
