Easy Cheesy Taco Pasta (30 Minute Meal)
There are nights when I just don’t feel like making a full, complicated dinner but still want something warm, filling, and packed with flavor. That’s exactly where this taco pasta comes in. It’s one of those meals that comes together quickly, uses simple ingredients, and somehow still feels like comfort food.
This recipe combines everything you love about tacos with the cozy, creamy texture of pasta. You get seasoned beef, melty cheese, and that classic taco flavor all in one pot. It’s become one of my go-to dinners when I need something easy that I know everyone will eat without complaints.

1 lb ground beef
1 box Banza penne (or any pasta)
1 packet taco seasoning
1 can Rotel (use half the can)
1 can diced tomatoes (undrained)
1 can tomato sauce
1 can beef broth (use half the can)
1 ½ to 2 cups shredded taco-style cheese
Salt + pepper to taste
Directions
- Brown the beef
- In a large pan, cook the ground beef over medium heat until fully browned. Drain excess grease.
- Add seasoning
- Stir in the taco seasoning with a splash of water (or a little broth) and let it simmer for 1–2 minutes.
- Add: Half can Rotel (drained), Full can diced tomatoes (drained), Full can tomato sauce, Half can beef broth
- Stir everything together.
- Pour in the uncooked pasta and mix well. Make sure it’s mostly covered in liquid.
- Simmer
- Cover and cook on medium-low for about 12–15 minutes, stirring occasionally, until pasta is tender.
- Stir in 1 to 1½ cups shredded cheese until melted and creamy.
- Top with more cheese and let it melt before serving.
